In a few weeks’ time the plants will produce a very pretty white flower and the smell will be even stronger, but now is the time to harvest the young shoots. It’s the leaves that you eat, not the bulbs. They are good raw in a salad or cooked in a soup. You won’t see wild garlic in the shops. But in Grange there’s no need to- it’s growing free all around.
